ASPIRE Super Kids:  Partners & Possibilities

On October 18th, the ASPIRE Super Kids welcomed Jodi Hitz back from ISU Extension.  This month’s lesson focused on vegetables.  

She explained that there are five parts to a plant:  the root, the stem, the leaf, the flower and the seed.  All vegetables come from one of those parts.  Potatoes and carrots are root vegetables.  Asparagus comes from the stem. Lettuce and spinach are leaf vegetables.  Cucumbers and squash come from the blooms and sweet corn is a seed vegetable.

Mrs. Hitz introduce the five food groups:  fruits, vegetables, proteins, grains, and dairy.  Then the kids were challenged to categorize foods to design a balanced and nutritious meal plate.  

The evening concluded with the kids working together in the kitchen.  Some kids chopped tomatoes.  Others diced peppers, onions, and garlic. Then all ingredients were combined with lime juice, salt & pepper to make a tasty fresh salsa to be enjoyed by all.
